Lotus Biscoff Cupcakes


The first time I got to try Lotus biscuits was in Belgium and they soon became my all time fav biscuits.

Cupcakes are also one of my most favourite things to bake, they’re quick and easy and look super cute! yep I just called cupcakes cute. lol. So when I seen a recipe that combined two of my favourite foods I just had to try them and share with you guys. They’re amazing!

Lotus Biscoff Cupcakes

Prep Time: 20 minutes

Cook Time: 15 minutes

Yield: 12

Lotus Biscoff Cupcakes


    For the sponge
  • 175 g Butter or baking spread
  • 175 g Caster sugar
  • 3 Eggs large
  • 30 g Lotus Biscoff spread
  • 175 g Self raising flour
    For the buttercream
  • 150 g Butter or baking spread
  • 300 g Icing sugar
  • 200 g Lotus Biscoff spread
  • 1 1/2 tbsp Milk
    For decoration
  • 12 Lotus biscuits
  • 1 Lotus biscuit crushed


    The Cupcakes
  1. Pre-heat your oven to 160C Fan/180C/350F/Gas Mark 4, and line a muffin tin with cake cases of your choice
  2. Cream together the butter, sugar and biscoff spread, until smooth
  3. Add the eggs one by one and whisk well
  4. Add in the self raising flour until mixture comes together, be careful not to over mix at this point.
  5. Divide the mixture between the 12 cupcake cases
  6. Bake them for 15-20 minutes or until they are golden brown. Then leave to cool completely
    Now make the buttercream
  1. Mix together the butter and icing sugar, then add the biscoff spread and milk, and mix until smooth. You can do this by hand or with an electric whisk
  2. Spread or pipe the buttercream on top of the cupcakes and add a Lotus biscuit on each one, then sprinkle the crushed biscuit over them all
